Its been very hot in Singapore lately. So hot that the thought of eating another greasy, oily meal almost disgusts me. Cue refreshing summer salads!
This is a salad that I improvised at home with the ingredients I had… you can just throw in your favourite vegetables into it without thinking twice. That, I think is the beauty of a salad. 😉
The recipe below serves 2 as a main course meal.
You will need:
For the salad base:
3 boiled potatoes, chopped into small cubes
1 red onion, finely chopped
1 large capsicum/ 2 small ones, chopped
a handful of chillies, finely chopped
pasta cooked al dente, about 200 gms. I like small elbow shaped pasta in my salads.
For the dressing:
1 cup yogurt (greek style). If you can’t find greek style, just pour your yogurt through a sieve and remove the whey.
juice from half a lemon (the large sized ones)
chaat masala (optional)
salt and pepper to taste
In a very large bowl, put together all the veggies and pasta. In a separate bowl, combine the yogurt, lemon juice, chilli powder, chaat masala, tabasco, salt and pepper. Crush the coriander and add to the mix. Pour the dressing into the salad and toss, toss, toss! Season with more salt and pepper to taste.
Voila. You have got yourself a light and yummy dinner under 20 minutes. Enjoy!
