Summer Food: easy weeknight dinner

This is my new favourite type of sandwich. It beats Subway hands down and it is yummy AND takes less than 20 mins to make. Win. 

I used focaccia for this sandwich and it really lifted the meal to a new level. If you are in Singapore, I highly recommend Gardenia’s spiced focaccia bread. The feta cheese also made a big positive difference, compared to the usual cheddar. 

Things you will need for a 1 person meal:

1 loaf of focaccia bread, cut into 2 halves and slit in the middle

some butter to toast your loaf on a tawa/griddle 


1 small red onion, chopped thinly

1 small capscium, chopped thinly

some fresh corn

half a zucchini, chopped thinly

1/4 packet of feta* cheese, cubed into small pieces 


juice from half a lemon

1 tsp of oil

chilli powder (optional)

salt and pepper to taste


Start by chopping your veggies. Heat up your tawa/griddle and toast your cut loaf lightly with some butter. As the bread toasts, prepare your dressing by combining all the ingredients in a small bowl (I just winged it by putting in the individual ingredients on top of my sandwich directly, though. This is an inferior method, but hey I don’t have to wash that bowl!). As soon as the bread is done, assemble your 2 sandwiches quickly, putting in a layer of veggies and cheese, topped off with the dressing.

Eat immediately, while still hot. As this is a light dinner, I would recommend polishing it off with some cold chocolate milk at the end.
